AnimaNera Caracolillo | Medium Dark Roast

AnimaNera Caracolillo (Peaberries)
Organoleptic characteristics: A smooth, full-bodied roast with buttery, chocolate hints. Peaberry is the cream of the crop of Puerto Rican Coffee. Rich and delicate taste with a complex aroma. 100% Arabica. With a delicate acidity that leaves the mouth with a clean feeling, offers an elegant finish and a persistent chocolate and bread crust aftertaste.

The Caracolillo Coffee Beans (Peaberries) are a natural occurring mutation of arabica where only one bean is produced by the coffee cherry. It is estimated that 5-10% of coffee grown will produce peaberries. They are considered superior to the rest of the same crop harvested because all the flavors and nutrients that would be dived into a double bean, are instead condensed into just one bean, thus creating a “super berry”. The Peaberries tend to be smaller, denser, and, noticeably sweeter if you compare with the regular beans. They taste brighter, juicier and are more flavorful. Roasting peaberries is slightly more challenging than roasting regular coffee beans. That’s down to the shape, and size meaning that more care is required than usual.

From a small plantation in the mountain of Puerto Rico, where coffee has been produced since 1736, the very aroma favored by European royalty and even the Pope in the late 1800s, deep in the Island’s tropical rainforest finally, was discovered the element of “AnimaNera”, The Black Soul.

AnimaNera is 100% Arabica and is composed of several varieties: Typica (considered the mother of all Arabicas), Bourbon and Limani all grown in the best areas of Puerto Rico: Maricao, Adjuntas, Lares and Yauco. Meticulous selection and careful hand picking characterizes the harvest. The slow ripening process obliges the pickers to spend day after day in the coffee plantations to collect only the ripest beans.
